Banana Oat (Monster) Pancakes

INGREDIENTS
1 cup oat flour (AKA instant or rolled oats in a blender)
1/2 cup instant or rolled oats (consistency is a bit different, but they taste the same)
1 tsp baking powder
1/8 tsp salt
1 1/2 bananas
1/4 large avocado
2 eggs
INSTRUCTIONS
Mix all dry ingredients in a medium sized bowl and set aside
In a larger bowl, mash the bananas and avocado
Add all wet ingredients to bananas and avocado and mix until smooth
Add dry ingredients to wet mixture
Thinly coat a pan with coconut oil and heat to medium/high
Ladle about 1/4 -1/2 cup of batter onto the skillet and cook for 2 mins (or until bubbles form)
Flip and cook for about 1 more minute
Serve with toppings of choice (pictured: apple butter and raspberries)
