Banana Oat (Monster) Pancakes

INGREDIENTS

  • 1 cup oat flour (AKA instant or rolled oats in a blender)

  • 1/2 cup instant or rolled oats (consistency is a bit different, but they taste the same)

  • 1 tsp baking powder

  • 1/8 tsp salt

  • 1 1/2 bananas

  • 1/4 large avocado

  • 2 eggs

INSTRUCTIONS

  1. Mix all dry ingredients in a medium sized bowl and set aside

  2. In a larger bowl, mash the bananas and avocado

  3. Add all wet ingredients to bananas and avocado and mix until smooth

  4. Add dry ingredients to wet mixture

  5. Thinly coat a pan with coconut oil and heat to medium/high

  6. Ladle about 1/4 -1/2 cup of batter onto the skillet and cook for 2 mins (or until bubbles form)

  7. Flip and cook for about 1 more minute

  8. Serve with toppings of choice (pictured: apple butter and raspberries)
