Creamy Kale and White Beans

INGREDIENTS

  • 1 Tbs olive oil

  • 1 yellow onion (chopped)

  • 1 red onion (thinly sliced)

  • 2 tomatoes (diced)

  • 5 cloves of garlic (roughly chopped)

  • 200g of kale

  • Splash of white vinegar

  • 800g white beans

  • 65g coconut cream

  • 1/4 liter water

  • 3 Tbs savory

  • 1 Tbs rosemary

  • 1 Tbs thyme

  • 1 tsp salt

  • black pepper

INSTRUCTIONS

  1. Saute the yellow and red onion in the olive oil over medium heat (about 4 minutes)

  2. Add the chopped tomatoes, garlic, and a pinch of salt and let simmer for a few minutes

  3. Add the kale and a splash of white vinegar and cook down for 3 minutes

  4. Pour in the white beans, coconut cream. and water

  5. Add the spices and let simmer for 15 minutes

  6. Serve over brown rice.
