Creamy Kale and White Beans

INGREDIENTS
1 Tbs olive oil
1 yellow onion (chopped)
1 red onion (thinly sliced)
2 tomatoes (diced)
5 cloves of garlic (roughly chopped)
200g of kale
Splash of white vinegar
800g white beans
65g coconut cream
1/4 liter water
3 Tbs savory
1 Tbs rosemary
1 Tbs thyme
1 tsp salt
black pepper
INSTRUCTIONS
Saute the yellow and red onion in the olive oil over medium heat (about 4 minutes)
Add the chopped tomatoes, garlic, and a pinch of salt and let simmer for a few minutes
Add the kale and a splash of white vinegar and cook down for 3 minutes
Pour in the white beans, coconut cream. and water
Add the spices and let simmer for 15 minutes
Serve over brown rice.
